Peter Balaz has let me know that Amazon.com posted some more information on the Indiana Jones DVD box. Here's what we may expect to find in the 'Bonus Material' DVD, according to Amazon.com:

All three films restored and remastered in 5.1 Dolby
Fourth disc of extras include new documentaries:
"The Making of the Trilogy"
"The Sound & Music of Indiana Jones"
"The Special Effects of Indiana Jones"
"The Stunts of Indiana Jones"
10 minutes of never-before-seen footage from the 3 films
And more
Widescreen anamorphic format
Number of discs: 4
